Gluten Free Recipe - Comfort Cornbread Casserole

This recipe is designed to give you a little Gluten Free comfort because tackling your allergy can be tough. This is our Comfort Cornbread Casserole - simply wonderful comfort food that goes great with any meat/protein. It’s inspired by our sister-in-law’s mother’s recipe (Thanks Angie! – And thanks Sonia for having a wonderful Mom who cooks like there’s no tomorrow!). We took the basic recipe, removed the g!uten and added some Bob’s Red Mill and it goes something like this….



20oz Bob’s Red Mill Cornbread mix - 1 bag
(Cornbread mix - NOT Corn Meal)
2 cans whole kernel corn (drained)
2 cans cream corn
½ cup butter (melted)
2 cup sour cream
2 eggs

Combine all ingredients in a large mixing bowl. Pour into your favorite casserole dish and bake @ 350 degrees for 30 minutes. It's crazy good!

Here are some ideas to mix it up:

Bake mini-casseroles in muffin cups with hotdog (or Polish sausage) slices for a neat spin on ‘pigs in a blanket’.

Add broccoli florets for some extra color and to make Mom happy because you’re getting some green veggies.

This recipe is sooooo easy that doubling it will be a snap AND it freezes really well, so make extra and have cornbread casserole a few weeks later with just a little overnight defrost in the fridge. Everyone will be asking when you’ll make Comfort Cornbread Casserole again.
