Gluten Free Recipe - Egg Buddies

LifeAfterGluten Egg Buddies Mini Casserole Muffins



This recipe is designed to make Gluten Free breakfast a little easier (all week long). Remember, we're all about a little planning to make things easy. We cook these little treats as a quick and easy way to tackle breakfast, the most important meal of the deal.

And without further adieu, the recipe goes something like this...



To make 24 Egg Buddy muffins, start with:

12 Eggs (XL or Jumbo)
1 cup of milk
1 box of Jimmy Dean Turkey Sausage (links or 8 patties)
24 GF Potato Puffs (tater tots, read the label for GF!)
8 oz of your favorite shredded cheese
24 paper muffin cups

OK, start by pre-heating the oven to 350 degrees. Next, get 2 muffin tins - 12 wells in each for a total of 24. Place paper muffin cups into the muffin tins. Next, chop the sausage into little cube chunks. Place 1 potato puff (tater tot) into each muffin cup. Add 2 or 3 turkey sausage chunks to egg muffin cup.

Next, crack the eggs into a large pitcher (see picture) and add the milk. Scramble everything. We use a Rival hand mixer, but you can do it by hand. Feel free to add spices to your liking. We often sprinkle in a little Mrs. Dash. Tabasco is good if you're looking for a little kick. The pitcher will make it easy to pour the egg mixture into the muffin cups.

Next, sprinkle cheese into each muffin well. Now, pour the egg mixture into the cups, filling each about 2/3rds full. Finally, pop 'em in the oven.

Bake for 30 minutes at 350 degrees.

Remove from the oven, let cool for a few minutes and ENJOY!

Take your leftover Egg Buddies, remove the paper muffin cups and store in the fridge or freezer with your favorite plastic storage container. We stack'em using wax paper in between each layer.

Two egg buddies (30 seconds in the microwave) and a piece of fruit is a great way to get your GF day started.
