Going gluten free can be a big challenge, especially at Thanksgiving. And let's face it, totally awesome stuffing is the make-or-break part of any Thanksgiving feast. Here's Mom's tried and true Sausage & Green Apple stuffing recipe that has been tweaked to pass the GF test.
10 cups GF bread, cubed & dried (local GF store or home-made, your call)
>>> home-made: cube up left-over bread, toast in the oven on a cookie sheet, let cool, freeze in an airtight container until the night before Thanksgiving
2 pounds favorite sausage, cooked, drained & crumbled
2 green apples, cores removed, cut & cubed (don't peel)
2 cups walnuts, cut to your liking, we prefer quartered
2 cups mushrooms, sliced & diced
1 cup celery,sliced & diced
1 Onion, sliced & diced (optional)
12oz GF Chicken Broth (+/- depending on how you like your stuffing)
Preheat oven to 350 degrees.
Combine ALL ingredients in a large mixing bowl (might need two bowls)
Season liberally with pepper, Mrs Dash and a two pinches of salt. Spoon into your favorite casserole dish (or two) and pop in the oven for 45 minutes. Covering with a lid or foil will keep your stuffing light colored with only a hint of a crispy top while cooking uncovered will yield darker stuffing with a very crispy top, somewhat crunchy.
This will easily go from oven to table when you're ready to server and it freezes nicely for leftovers down the road.
